Executive Chef - Sports, Leisure and Hospitality

Allan began his career in the British Army where he gained wide experience of food production and service in many different environments.

In 1993 Allan joined the Compass Group at Cheltenham racecourse, quickly gaining promotion to Head Chef. Allan had responsibility for all food production across the racecourse. During the world famous Cheltenham festival in March each year, Allan lead a kitchen brigade of over 200, providing food services for public retail outlets, informal and formal restaurants and over 10,000 hospitality covers each day.

Allan and his team were also responsible for all food services at the Centaur, a major conference and banqueting venue, located within the racecourse.

In 2004 Allan was then appointed to Executive Chef of the Compass Racing division with responsibilities for food services at Cheltenham, Aintree, Newmarket, Goodwood and Warwick.

In 2007 Allan become the Executive Chef for the entire Sport, Leisure and Hospitality division and was part of the Compass project team who successfully won the contract to provide catering services to thirteen Jockey Club Racecourses across the UK.

Allan's role now includes overseeing the food services at many of the UK's most prestigious sporting and cultural events including Wimbledon, Twickenham, The Oval, The Brit Awards, Gyndebourne and, most recently, the G20 conference at London's Excel Centre.
