    We snapped Stuart up as a Chef de Partie in 2003. Over the course of 4 years, Stuart worked his way up to Junior Sous Chef. He then left us briefly for a 6-month traveling stint.

    On returning to the UK, Stuart also returned home to Compass as Junior Sous Chef. Six months later he was promoted to Sous Chef, and then found himself moving on and up through the ranks every six months or so, with the support of his regional manager. Together, they moved across various units to sharpen our offer and tighten up how each unit runs. This invaluable experience helped prepare Stuart for the position of Sous Chef at a number of high profile sites, and for the opening of a new head office at a major London Airport.


  • From Sous Chef to Head Chef

    After successfully launching the new airport head office, Stuart applied for the top job of Head Chef and was successful.

    Stuart’s been a Head Chef with us for over 6 years at a host of interesting and challenging sites, including one within a luxury department store. Today he caters for up to 7,000 employees every day, running six kitchen concepts within a vast food-court-style environment. But he’s not finished yet. Stuart’s set his sights on becoming an Executive Chef - we’ll be behind him every step of the way.
