Their lasting appeal as a catering partner lies in the team’s innovative and forward-thinking culinary craft, consistently hitting the highest levels of service year on year.
Always ready to embrace a challenge, a 645-strong team of 525 waiters, 70 chefs and 50 back-of-house staff including many apprentices and graduates, delivered a showstopping experience to over 2,500 VIP guests at the 2024 event. As well as this incredible feat, Payne & Gunter’s commitment to achieving a Net Zero status by 2027 meant that over 90% of this year's menu spotlighted locally sourced, plant-based ingredients - underscoring their dedication to a greener future.
Serving up a menu of ancient flavours
In crafting the menu, Payne & Gunter orchestrated a modern blend of ancient flavours that expertly blended innovation with tradition. Despite the constraints of live TV, the chefs masterfully presented dishes like fava bean tahini and ancient grain poke bowl, reimagining ancient British produce for a contemporary palate.
From woodland mushroom 'cordon bleu' to glazed Bramley apple mousse, each dish was meticulously prepared and served with precision.
A tight operation flawlessly executed
Navigating operational challenges with finesse, Managing Director of Payne & Gunter Bethan James flawlessly executed the feeding of 5,000 guests within a tight timeframe. Despite the complexity, the team’s pitch-perfect hospitality left an indelible mark on all who had the pleasure of indulging.
