Sweet, Savoury and Sustainability at the Master Chefs of Great Britain Lunch

Apprentice chefs from Compass Group UK & Ireland and South Lanarkshire College were put to the test on 10 August, as they joined a selection of Master Chefs to cook for the first Master Chefs of Great Britain regional event of the year.

Master Chefs Martin Hollis, Graham Singer, Shona Sutherland, David Auchie and Barry Fleming were joined by seven Compass Group UK & Ireland apprentice chefs and six apprentices from South Lanarkshire College, to create a delicious lunch centred on seafood and sustainability.

Held at the Old Course Resort and Spa in St Andrews, the menu was created using only local Scottish produce.

David Hay, Managing Director of Compass Scotland, said: “Our apprentices did a wonderful job working with Compass Scotland culinary director, Graham Singer, to produce a delicious lunch focused on a theme we are all incredibly passionate about. Sustainability is key to our future food strategies and our apprentices are key to meeting our commitments.”

George McIvor, Chairman of the Master Chefs of Great Britain, said: “This event concludes and celebrates a very tough 18 months where many chefs and their kitchens have been unable to operate because of COVID-19. Some inspirational dishes were prepared using the finest and most sustainable produce from around the region, resulting in an outstanding seven course lunch.”​

Jonathan Foot, Head of Apprenticeships and Early Careers at Compass Group UK & Ireland, added: “This was a fantastic experience for our apprentices, cooking intricate and flavoursome dishes at a prestigious event, for some of the best chefs in Great Britain. Events like these add a special layer to the Apprenticeship programme, and not only did they learn a lot, but they thoroughly enjoyed it – as did the guests!”

Compass Scotland launched its first bespoke Modern Apprenticeship Programme earlier this year, with a commitment to creating and developing 100 new Modern Apprenticeship opportunities in its first year.

The apprenticeship programmes create a career progression roadmap for an individual to work toward, from a Foundation Apprenticeship, Modern Apprenticeship or a Graduate Apprenticeship, dependent on their current situation.

Part of Compass Group UK & Ireland, the UK's largest food and support services firm, Compass Scotland launched as a distinct business in November 2020. Compass Group UK & Ireland recently announced its plans to achieve Climate Net Zero by 2030.
