Head Pastry Chef - Restaurant Associates | Compass group

Chef De Partie - Levy UK

  • Hayleigh Whiteside

I’ve thoroughly enjoyed building my career as a chef since joining Compass Group UK&I as an Apprentice in 2013. After successfully completing my apprenticeship, I was hired as a Food Development chef in the Innovation Centre at our Head Office in Chertsey.

I’ve had the opportunity to work alongside many great chefs who have always been supportive of my learning. In 2016, I competed in the Salon Culinaire at Hotelympia, where I was awarded a bronze medal!

Since then I’ve moved into a new role within Levy UK based at Twickenham Stadium. This has also given me the opportunity to work big events such as Wimbledon, Wentworth PGA golf and Horse of the Year Show. It’s great to see yet another side of the business and to understand the logistics and planning behind the large range of events that we cater for.

What’s been your career highlight to date?

I really enjoyed my role as Food Development chef at Head Office, meeting a number of different chefs, I learnt many new skills. In this role and I was able to complete my level 3 apprenticeship. I also took part in cooking for the Apprenticeship Dinner where I was able to work alongside a head pastry chef that taught me so much in creating an amazing dessert for the dinner.

  • Why is the Women in Food programme important to you?

I think the Women in Food programme is key to helping others find a passion and career within the catering industry whether it’s a young girl leaving school or a mother ready to re-enter the world of work. As chefs, we need to support others starting their culinary journey to give them the right education and training for their future.
